Zero Zero 39 Pizzeria was founded by Francesco and Carlotta Zaza in December of 2014. The Zaza family are from Roma Italy, and have brought with them to Southern California their favorite recipes for pizza using only fresh ingredients and the best doppio zero flour. With Niccolò and Michela, that came straight from Italy, they opened the second location in The Packing House, in Anaheim. Roman pizza is a medium thin crust pizza with simple ingredients; olive oil, 00 flour, water, yeast, salt, and a touch of sugar. The pizza is sold by the slice (pizza al taglio) and baked in large rectangular trays. 00 flour is the finest grade of flour milled in Italy, and has a lower gluten content than most flours, making the perfect pizza dough.
